This is a great example of knowledge which is referencable vs knowledge which is known. Sure we can all look up how to use echo and grep but without knowing how they are useful you'd have enough information to look them up.

While I agree in this is a silly example of some rather basic shell functionality, the larger point is often missed in an interview setting by both the interviewer and the candidate.

The interviewer often focuses on specifics of implimentaitons ("What's the grep option for matching the whole line?") rather than asking about how to accomplish complex tasks.

Candidates often over state how "oh I would just look that up" without understanding that a base level of knowledge allows one to see solutions to problems that would otherwise be impossible to see.
